    What does preserve differ from jam in?These two names often perceive as the synonyms meaning one and too a dish. Actually, preserve and jam — two essentially different delicacies which differ not only in a cooking method, but also structure.The main difference of preserve from jam – berries or fruits in preserve don't crush, they keep the form. The final product turns out viscous and fluid. Process of preparation of preserve is much simpler, than at jam. Berries mix with sugar or sugar syrup. A classical ratio of sugar and berries 1:1 (that is on 1 kg. sugar take 1 kg of berries). Though for different berries this ratio, certainly, a miscellaneous. For currant and a honeysuckle of sugar, clear, it is required more.Preserve is the fruit and berry delicacy received owing to cooking of one type of fruit, berries, and sometimes and vegetables with sugar. Feature of jam is that ingredients have to be evenly impregnated with syrup. At the same time they shouldn't get out of the shape, and also it is important that components didn't boil soft and weren't wrinkled.Jam is the fruit and berry dessert received by method of boiling of ingredients to homogeneous jellylike mass.
